For the interlocking to work as intended you'll want to have the project at the exact width to accommodate full panels. The fingers that project from the interlocking corners will slide over the slots on the panel for a snug seam that will virtually disappear.
With good carpentry skills and some artistry you may be able to make shorter work but hiding the seams will require time and skill. If you haven't already - you may want to order a sample of the panel to plan how you'd create the cuts should you want a fireplace that is more narrow.
